What is Cassava?

Cassava also known as yuca or manioc, is a brown, oblong starchy root vegetable that is native to South America but is now grown throughout the tropical regions of the world. It is a staple food for millions of people in Africa, Asia, and South America, where it is used in a variety of dishes.

This starchy, high-carbohydrate tuber – similar to yam, taro, plantains and potato, is classified as a tuberous root vegetable and as such, is gluten, grain and nut-free, as well as a vegan, vegetarian and paleo alternative. Cassava also consists of essential micronutrients, such as vitamins A, B and C, iron and Zinc.
